Ah, the single life.
For me, being single means doing whatever the heck I want to.
I have freedom.
I can do anything I decide to do.
I can be just about anyone I decide to be.
I can go wherever I want to go.
I can read all day long or watch tv shows and don't have to tell anybody.
Oh, it's so great. Because, let's be honest, having a significant other changes all of that even if we think it doesn't (most people are in denial). That's exactly the way it's supposed to be. We crave having someone to share life with, even if it means sacrifice, and those who think they shouldn't sacrifice really shouldn't be in relationships. So, take advantage of being single, I say! Ammiright?
Anyway.
I just really like being single. I always have and i'm darn good at it. That's why I've had like, well, let's be honest... one boyfriend (obviously I learned my lesson).
Life is good.
.... Right? (Dang men are getting to me.)
Oh, well. Timing is everything.
So anyway, you want to make this banana bread because it's basically to die for, especially with some peppermint tea, so here's the recipe (thanks, Martha!):
- 1/2 cup (1 stick) butter, at room temperature, plus more for pan
- 1 cup granulated sugar (i used half brown)
- 2 large eggs
- 1 1/2 cups unbleached flour (whole wheat pastry flour is perfect for this)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup mashed very ripe bananas
- 1/2 cup sour cream (if you don't have sour cream, use plain or vanilla yogurt, or today i used plain kefir)
- 1 teaspoon vanilla
- 1/2 cup chopped walnuts or pecans (eh, who wants those?)
- Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan; set aside. In an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, and beat to incorporate.
- In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture, and mix until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in nuts, and pour into prepared pan.
- Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes. Let rest in pan for 10 minutes, then turn out onto a rack to cool.
- Eat and be happy, and have a great day! :)

ReplyDeleteThought I'm in a happy relationship, there was a long period of time I was single and I really enjoyed that time. I found out so much about myself, who I am, what I want. Timing is definitely everything.
