Joyeux anniversaire, Nathan!

It's Nathan's birthday, I've only been home a couple of hours, but I've already entered the kitchen to help Mom with birthday dinner.  I used to help with dinner all the time, and I've recently realized how much I've missed it!  I think strong ties are created in the kitchen.  Anyway, tonight we're making Carrot Soup and setting out and Abend Brot (complete with steak tartare).  It smells absolutely heavenly in this kitchen!  Please, just come and smell it.  (Keri, I'll be making this when I get back - be excited.)

Carrot Soup
from Nourishing Traditions
- Serves six -

2 medium onion, peeled and chopped
1 pound carrots, peel and sliced
4 tablespoons butter
2 teaspoons curry powder
1 1/2 quarts chicken stock (homemade is best)
1/2 teaspoon freshly grated lemon rind
1/2 teaspoon freshly grated ginger
sea salt or fish sauce and pepper piima cream (whatever the heck that is) or creme fraiche (my favorite)

Saute onions and carrots very gently in butter about 45 minutes or until tender.  Add curry powder and stir around until well amalgamated (I think Brent Mecham would love this word).  Add stock, bring to a boil and skim.  Add lemon rind and ginger.  Simmer, covered, about 15 minutes.  Puree soup with a handheld blender.  Season to taste.  Ladle into heated bowls and serve with cultured cream (creme fraiche).

Dinner is over; I am full and happy.  I'm heading to the store now to grab some ice cream to celebrate Nathan's birthday! More later.

xxL
