a summer kind of meal
so listen, the other day i posted the chicken photo on my instagram page and several people asked for the recipe. as well they should, because it was delicious.
it's probably the easiest of all easy chicken recipes, but i will tell you anyway.
here's what you do for THE CHICKEN:
half cup dijon mustard
quarter cup real maple syrup or honey
tablespoon of rice wine vinegar or apple cider vinegar
mix it up. salt and pepper the chicken. toss those in. coat in the good stuff, and bake at 450 degrees for about forty minutes. baste halfway through, or just flip the chicken over. all the menz will come running.
i eyeballed the whole thing, so i may have ended up doubling the recipe for my five or six chicken thighs, but i don't think you can really go wrong!
the evening also called for something fresh, so we threw a lot of things into a bowl and called it A SALAD:
one tablespoon red wine vinegar (i used balsamic, and it was delish)
one tablespoon apple cider vinegar
two tablespoons olive oil
half tablespoon honey
salt and pepper
about twenty-five large basil leaves, chopped
three cloves of garlic (if you're not huge into garlic, cut this amount - john wasn't as excited about it as i was)
one can chickpeas
about a pint of grape tomatoes cut in half, or something like it
put the sauce together first, then pop in the garlic and basil, and then add the bigger stuff. let it marinate for at least twenty minutes, and then eat! tastes awesome on day two, too!
again, i eyeballed it. i really don't think you could go wrong with this. just throw it in and be happy!
